Improved brine solutions and uses thereof for uncontaminatedly and/or efficiently freezing items such as foods, and biological samples. In accordance with one embodiment, a brine solution containing a sufficient amount of dye in conferring the solution a distinctive color is used in the freezing process. In accordance with another embodiment, a brine solution containing deionized water is used for improving the freezing efficiency and/or freezing capacity.

L'invention concerne des solutions de saumure améliorées ainsi que leur utilisation dans la congélation efficace et/ou stérilisée d'articles tels que des produits alimentaires et des échantillons biologiques. Dans un premier mode de réalisation de l'invention, une solution de saumure renfermant une quantité suffisante de colorant qui lui confère une couleur particulière est utilisée dans l'opération de congélation. Dans un second mode de réalisation, une solution de saumure contenant de l'eau désionisée est utilisée pour améliorer l'efficacité de congélation et/ou la capacité de congélation.
