An enhanced seed content of sulfur-containing amino acids is achieved, without significant allergenicity, in transgenic plants, such as soybean plants, that contain a heterologous DNA segment embodying one or more copies of a gene that codes for a 10 kDa or 16 kDa rice prolamin or sunflower 2S albumin protein.
