A fossil fuel-fired apparatus (10) for steaming food having at least one housing wall forming a housing (11), a steam chamber(12) disposed within the housing and forming an annular space (15) between the steam chamber (12) and the housing wall, and at least one fossil fuel burner (16) disposed beneath the bottom portion of the steam chamber (12) and oriented to produce steam from water in a bottom portion of the steam chamber. Disposed within the annular space (15) are guides for directing the hot products of combustion generated by the burners along the exterior wall surface (14) of the steam chamber (12), thereby maintaining the temperature of the steam chamber walls above the temperature of the saturated steam and preventing condensation of the steam in the steam chamber.

La présente invention concerne un appareil chauffé aux combustibles fossiles (10) pour étuver des aliments. Cet appareil comporte au moins une paroi de carter formant un carter (11), une chambre à vapeur (12) disposée dans le carter et formant un espace annulaire (15) entre la chambre à vapeur et la paroi du carter, et au moins un brûleur à combustible fossile (16) placé en dessous de la partie basse de la chambre à vapeur (12) et orienté de façon à produire de la vapeur à partir de l'eau dans le fond de la chambre à vapeur.
