Conversion of crude lecithin is performed by incubating the lecithin with a lipase-phospholipase mixture in water/polyol environment. The incubation is carried out at about 40-50 ~C and a pH of about 7 to about 8 while stirring continuously. The reaction simultaneously produces lysolipid, lysophospholipid, monoglycerides, and diglycerides. The conversion rate of lecithin is more than 80 % based on the ration of LPC/PC (lysophosphatidylcholine/phosphatidylcholine). Calcium chloride can be added to the reaction mixture to capture released fatty acids.

L'invention concerne la conversion de lécithine brute assurée par l'incubation de la lécithine avec un mélange de lipase-phospholipase dans un environnement eau/polyol. L'incubation est effectuée à environ 40-50 ·C et avec un pH compris entre environ 7 et environ 8 parallèlement au brassage. La réaction produit simultanément un lysolipide, lysophospholipide, des monoglycérides et des diglycérides. Le rapport de conversion de la lécithine est supérieur à 80 % selon la proportion de LPC/PC (lysophosphatidylcholine/phosphatidylcholine). Le chlorure de calcium peut être ajouté au mélange réactionnel pour capturer les acides gras libérés.
