An exhaust hood (555) captures and contains a thermal plume (535) with a minimum of exhaust air by defining any of various jet configurations (550,557) that induce fumes into the hood (555), protect a plug flow from room transients by forming a curtain, enlarge a buffer zone in the hood by augmenting a vortex flow (542) within and below the hood (555), and by means of various other features.
