A flowable nondigestible oil composition having a Consistency in a temperature range of 20 ~C to 40 ~C of less than about 600 P.sec(n-1). The flowable nondigestible oil contains a liquid polyol polyester having a complete melt point less than 37 ~C, and a solid polyol polyester having a complete melt point of at least about 37 ~C, wherein the solid polyol polyester contains a solid saturated polyol polyester capable of forming crystallized spherulites. The flowable nondigestible oil is made by a process which includes the steps of melting completely the nondigestible oil, reducing the temperature of the melted nondigestible oil to a first crystallization temperature less than the onset crystallization temperature of the solid saturated polyol polyester, holding the nondigestible oil at the first crystallization temperature for a time sufficient to crystallize a portion of the solid saturated polyol polyester into crystallized spherulites, further reducing the temperature to an ambient crystallization temperature, and holding the polyol polyester composition for a time sufficient to crystallize the remaining portion of the solid polyol fatty acid polyester. The process is accompanied by shearing of the composition during the crystallization of the remaining portion of the solid polyol fatty acid polyester. The process is generally completed within 5 hours, usually within about 2 hours.

Cette invention concerne une composition d'huile fluide non assimilable dont la consistance se situe dans la plage de température 20 ·C-40 ·C à moins d'environ 600 P.sec?(n-1)¿. L'huile fluide non assimilable contient un polyester de polyol liquide dont le point de fusion complète est inférieur à 37 ·C et un polyester de polyol solide dont le point de fusion complète est au moins égal à environ 37 ·C, ledit polyester de polyol solide contenant un polyester de polyol saturé solide capable de former des sphérulites cristallisés. L'huile fluide non assimilable est produite au moyen d'un procédé qui comprend les étapes suivantes: la fusion complète de l'huile non assimilable, la réduction de la température de l'huile non assimilable fondue à une première température de cristallisation inférieure à la température de cristallisation de départ du polyester de polyol saturé solide, le maintien de l'huile non assimilable à la première température de cristallisation pendant une durée suffisante pour cristalliser une partie du polyester de polyol saturé solide sous forme de sphérulites cristallisés, la réduction de la température à une température de cristallisation ambiante et le maintien de la composition de polyester de polyol pendant une durée suffisante pour cristalliser la partie restante du polyester d'acide gras polyol solide. Le procédé s'accompage du cisaillement de la composition pendant la cirstallisation de la partie restante du polyester d'acide gras polyol solide. Le procédé est de manière générale terminé en 5 heures, il est habituellement terminé en 2 heures environ.
