Le dispositif de coupe, mettant en oeuvre ce procédé, comprend des moyens (3,4) d'alimentation en eau sous pression, et une tête tournante (5) pourvue à sa périphérie d'au moins une buse (6) par laquelle un jet d'eau coupant (7) est éjecté, le ou les jets d'eau engendrant, par un effet de réaction, la rotation de la tête (5) donc du ou des jets (7) eux-mêmes. Ce dispositif peut être conçu comme un appareil portatif.
