A .beta.-glucan-containing composition which contains .beta.-glucan originating in a microorganism or a basidiomycete. Using the .beta.-glucan- containing composition, .beta.-glucan can be uniformly dispersed in a food without worsening the texture, taste, etc. of the food. A novel microorganism capable of efficiently producing .beta.-glucan, which has a high activity and favorable qualities and is usable as the microorganism-origin .beta.-glucan as described above, at a high production speed from less expensive saccharides such as sucrose.
La présente invention concerne une composition contenant du .beta.-glucane originaire d'un micro-organisme ou de basidiomycètes. L'utilisation de cette composition contenant du .beta.-glucane permet de disperser uniformément ce .beta.-glucane dans un aliment sans en dégrader la texture, le goût, etc.. Cette invention concerne aussi un nouveau micro-organisme capable de produire efficacement du .beta.-glucane qui possède une activité élevée et des qualités favorables, ce micro-organisme pouvant être utilisé pour obtenir le .beta.-glucane dans les conditions susmentionnées, à une vitesse de production élevée à partir de saccharides moins coûteux tels que du saccharose.
