The disclosure relates to a method and an apparatus for heat-treating a food which is packed in a container (1, 14) of flexible or foldably formable packaging material for the purposes of extending the shelf life of the food. In order to accelerate the heat treatment, the container (1, 14) is disposed such that it is, during the heat treatment proper, caused to adopt a first position in which the distance between opposing side wall panels (7) and, thereby, the layer thickness of the packed food, is reduced to a minimum, taking into account the volume of the food and the surface of the packaging material, as well as the shape of the container proper. After completed heat treatment, the container is brought to a second position in which the shape of the container corresponds to that shape in which the container (14), with its packed, heat treated food, is to be distributed, sold or used.

On décrit un procédé ainsi qu'un dispositif de traitement par la chaleur d'un aliment, lequel est emballé dans un contenant (1, 14) réalisé dans un matériau d'emballage souple ou formé par pliage, ce procédé et ce dispositif étant destinés à allonger la durée de conservation de l'aliment. Afin d'accélérer le traitement par la chaleur, on place le contenant (1, 14) de telle manière que celui-ci soit contraint d'adopter, lors du traitement par la chaleur proprement dit, une première configuration dans laquelle la distance entre les panneaux (7) des parois latérales opposées, et donc l'épaisseur des couches de l'aliment emballé, soient réduites à un minimum, le volume de l'aliment, la surface du matériau d'emballage ainsi que la forme du contenant lui-même étant pris en compte. Après achèvement du traitement par la chaleur, on donne au contenant une seconde configuration, laquelle correspond à celle dans laquelle le contenant (14) et son aliment emballé et traité par la chaleur, doivent être distribués, vendus ou utilisés.
