The invention relates to a method of producing microcapsules containing a material to be encapsulated. Said method is characterised in that a mixture of at least one solubilised vegetable protein and a polyelectrolyte with an opposite charge to the protein is subjected to complex coacervation in an aqueous medium, possibly followed by hardening, in the presence of said material to be encapsulated.

Procédé de fabrication de microcapsules contenant un matériau à encapsuler, caractérisé en ce qu'on soumet un mélange d'au moins une protéine végétale solubilisée et d'un polyélectrolyte de charge opposée à ladite protéine à une coacervation complexe en milieu aqueux suivie éventuellement d'un durcissement, en présence dudit matériau à encapsuler.
