The invention relates to a method for storing natural casings, especially hog casings and sheep casings, for packaging meat and sausages, according to which the natural casings are deep-frozen to at least 50 ~C after processing. The invention also relates to deep-frozen casings and to a device for holding natural casings that are placed on rod-shaped support devices. Said device comprises two supports (14), and, interlinked therewith, a plurality of insertion elements (16, 18) into which receiving devices (20) are inserted. Every receiving device (20) has holding elements (22) onto which the rod- shaped support devices (24) are placed. The gathered natural casings are disposed on the support devices (24). The frame that is loaded with the natural casings (26) is then transported to a cooling or freezing installation for deep-freezing the natural casings.
L'invention concerne un procédé pour le stockage de boyaux naturels, notamment de boyaux de porc et de mouton, destinés à emballer viandes et saucisses, les boyaux naturels étant surgelés à au moins - 50 ·C après la préparation. L'invention concerne également un boyau naturel surgelé. L'invention concerne en outre un dispositif servant à conserver les boyaux naturels enfilés sur des dispositifs supports en forme de barres. Le dispositif selon l'invention comprend deux piliers (14) auxquels sont emmanchés plusieurs éléments d'enfichage (16, 18) dans lesquels des dispositifs de réception (20) sont enfoncés. Chaque dispositif de réception (20) comporte des éléments de fixation (22) sur lesquels les dispositifs supports en forme de barres (24) peuvent être enfilés. Le boyau naturel plissé est placé sur les dispositifs supports (24). Le châssis muni des boyaux naturels (26) est alors acheminé dans une installation de refroidissement ou de surgélation afin de surgeler les boyaux naturels.
