A method for manufacturing a drink made from beans as a raw material and a solid fermented food. It is characterized in that it comprises the steps of: preparing a stabilized suspension by homogenization-treating an aqueous slurry of whole grain-mash of beans once or a plurality of times using a homogenizer; denaturing protein by adding a coagulant and/or a pH adjustor to the stabilized suspension; and performing the dispersing treatment for making the relevant protein denaturation raw material dispersed by a physical dispersing means. In a solid fermented food, it comprises a step of fermenting for fermenting/solidifying by adding a lactic bacterium starter following the step of performing a homogenization treatment, and manufactures it via the step of maturating it if it is necessary.
L'invention concerne un procédé de fabrication d'une boisson élaborée à partir de fèves et d'un produit alimentaire solide fermenté. Ledit procédé se caractérise en ce qu'il consiste à préparer une suspension stabilisée par homogénéisation d'une pâte aqueuse faite d'une pâte de fèves une ou plusieurs fois à l'aide d'un dispositif d'homogénéisation; à dénaturer la protéine par addition d'un coagulant et/ou d'un régulateur de pH dans la suspension stabilisée; et à procéder à un traitement de dispersion afin de disperser la matière première de dénaturation protéique adaptée par un moyen de dispersion physique. Pour l'obtention d'un produit alimentaire solide fermenté, le procédé comprend une étape de fermentation assurant la fermentation/solidification par addition d'un ferment lactique, suivie d'une étape de traitement par homogénéisation, puis de fabrication via une étape de maturation si nécessaire.
