A cutter assembly for an extruder includes an elongated extrusion member (9) having an open feed end (12). The open feed end (12) is attachable in fluid communication with the extruder for supplying a mash thereto. An extrusion die (22) is supported on the elongated extrusion member (9). The extrusion die (22) includes at least one extrusion outlet (24) formed therein. A cutter member (14) cuts extrudate to a desired length as the extrudate exits the die (22). The at least one extrusion outlet (24) is shaped to have at least six straight sides, the shape of the at least one extrusion outlet (24) ensuring that the mash exits the ex-trusion die (22) in a straight orientation in order to form a straight food product.
L'invention concerne un ensemble de découpe pour extrudeuse comprenant un élément d'extrusion allongé comportant une extrémité d'alimentation ouverte. Ladite extrémité d'alimentation ouverte peut être mise en communication fluidique avec l'extrudeuse afin d'alimenter celle-ci en pâte. Une filière d'extrusion est supportée par l'élément d'extrusion allongé. La filière d'extrusion comprend au moins un orifice d'extrusion façonné dans celle-ci. Un élément de découpe permet de découper l'extrudat selon la longueur désirée au fur et à mesure que l'extrudat sort de la filière. Le ou les orifices d'extrusion sont façonnés de façon à comporter au moins six côtés droits, la forme dudit ou desdits orifices d'extrusion garantissant que la pâte sort de la filière d'extrusion selon une orientation rectiligne de façon à obtenir un produit alimentaire rectiligne.
