A manufacturing system for the manufacture of an Ethiopian staple food referred to as Injera and sometimes Enjera, including an apparatus and a method or process. The system includes a depositing stage, a spreading stage including an air conduit with at least one air aperture disposed to impart air on the Injera batter, a flash heating stage including a flash heater which applies sufficient heat to the Injera batter to cause moisture in the Injera batter to flash evaporate, and one or more finishing stages. The one or more finishing stages may include baking, cooling or otherwise applying heat for a desired finishing result.
