The invention relates to a process for the production of enantiomerically-pure AzeOH which comprises selective crystallisation of a diastereomerically-pure AzeOH-tartrate salt from a homogeneous solution of AzeOH, optically-active tartaric acid, an organic acid and an aldehyde, followed by liberation of the free amino acid.

Cette invention concerne un procédé permettant de produire de l'AzeOH ne contenant pas d'énantiomères. Ce procédé consiste à effectuer la cristallisation sélective d'un sel de tartrate d'AzeOH ne contenant pas de diasteréomères, à partir d'une solution homogène contenant du AzeOH, de l'acide tartrique actif sur le plan optique, un acide organique et un aldéhyde. Cette cristallisation est suivie de la libération de l'acide aminé libre.
