The subject of the present invention is the use of a maltodextrin or of a glucose syrup obtained, by acid or enzyme hydrolysis, from a starch of a leguminous plant having an amylose content of between 25% and 50%, expressed as dry weight relative to the dry weight of starch, for encapsulating organic compounds.

La présente invention a pour objet l'utilisation d'une maltodextrine ou d'un sirop de glucose obtenus, par hydrolyse acide ou enzymatique, à partir d'un amidon de légumineuse présentant une teneur en amylose comprise entre 25 % et 50%, exprimé en poids sec par rapport au poids sec d'amidon, pour l'encapsulation de composés organiques.
