A cutting head assembly having a tensionable serpentine blade. The cutting head assembly may also include a means for monitoring tension during set-up of the cutting head assembly and monitoring tension and sensing failure or breakage during operation. The serpentine blade is formed having a continuous configuration including a plurality of leg segments connected by a plurality of bends producing a generally serpentine configuration. The cutting edge of the serpentine blade is unsharpened. Either edge of the serpentine blade may be employed for the cutting edge. A serpentine blade may be removably mountable to one or both sides of the cutting head. In the case where a serpentine blade is mounted to both sides of the tensive cutting head, the first serpentine blade presents a first array and the second serpentine blade presents a second array rotated at 90° to the first array. This configuration of the cutting head assembly, when employed within a hydraulic cutting device, renders cut food product having stick configuration.
