The methodincludes the step of mixinga food compositioncomprising an anionicpolymerwith a saturated preservativehaving an overall positive charge, wherebythe saturated preservative is added inthe last mixing step,in order to produce a food composition free of spoilage and pathogens.

L'invention concerne une méthode de production d'une composition alimentaire microbiologiquement stable et sûre. La méthode consiste à mélanger une composition alimentaire comprenant un polymère anionique avec un agent de conservation saturé présentant une charge positive globale. L'agent de conservation saturé est ajouté au cours de la dernière étape de mélange afin de produire une composition alimentaire exempte d'altération ou d'éléments pathogènes.
