A food product comprises an oligosaccharide composition that is digestion resistant or slowly digestible. The oligosaccharide composition can be produced by a process that comprises producing an aqueous composition that comprises at least one oligosaccharide and at least one monosaccharide by saccharification of starch, membrane filtering the aqueous composition to form a monosaccharide-rich stream and an oligosaccharide-rich stream, and recovering the oligosaccharide-rich stream. Alternatively, the oligosaccharide composition can be produced by a process that comprises heating an aqueous feed composition that comprises at least one monosaccharide or linear saccharide oligomer, and that has a solids concentration of at least about 70% by weight, to a temperature of at least about 4O0C, and contacting the feed composition with at least one catalyst that accelerates the rate of cleavage or formation of glucosyl bonds for a time sufficient to cause formation of non- linear saccharide oligomers, wherein a product composition is produced that contains a higher concentration of non-linear saccharide oligomers than linear saccharide oligomers.

L'invention concerne un produit alimentaire incluant une composition d'oligosaccharide résistant à la digestion ou à digestibilité lente. La composition d'oligosaccharide peut-être produite par un procédé comprenant les étapes consistant à : produire par saccharification d'amidon une composition aqueuse comprenant au moins un oligosaccharide et au moins un monosaccharide ; filtrer la composition aqueuse avec une membrane pour former un courant riche en monosaccharide et un courant riche en oligosaccharide ; et récupérer le courant riche en oligosaccharide. En variante, la composition d'oligosaccharide peut être produite par un procédé qui comporte les étapes consistant à : chauffer à une température d'au moins 400°C une composition aqueuse d'alimentation comprenant au moins un monosaccharide ou un oligomère linéaire de saccharide et présentant une concentration en matières solides d'au moins environ 70 % en poids ; et mettre en contact la composition d'alimentation avec au moins un catalyseur qui accélère le taux d'ouverture ou de formation des liaisons glycosyl pendant une durée suffisante pour causer la formation d'oligomères non linéaires de saccharide. Ledit procédé permet de produire une composition qui contient une concentration en oligomères non linéaires de saccharide plus élevée que les oligomères linéaires de saccharide.
