A mixing assembly and method of mixing where a retentate is introduced into a T-connector (220) via a T-connector retentate inlet (222). Retentate then passes into a mixer body (230) via a retentate passageway (226) into a receiving chamber (232), then enters injection chamber (234) and next enters a retentate turbulence zone (239). The assembly is adapted for use in the uniform mixing of rennet and precheese. The precheese is suitably formed by the ultrafiltration of milk. The mixing assembly is adapted for modification and facile disassembly for cleaning to maintain sanitary standards.
L'invention porte sur un ensemble mélangeur et un procédé de mélange où l'on introduit le rétentat dans un raccord en T (220) par un orifice d'entrée à rétentat du raccord en T (222). Le rétentat passe ensuite dans un corps mélangeur (230) par un conduit à rétentat (226) dans une chambre réceptrice (232), puis pénètre dans une chambre à injection (234) et pénètre alors dans une zone de turbulence à rétentat (239). L'ensemble est conçu pour pouvoir mélanger de manière homogène de la présure et du pré-fromage. Le pré-fromage est confectionné de manière appropriée par l'ultrafiltration du lait. L'ensemble mélangeur est conçu pour pouvoir subir des modifications et pour pouvoir être aisément démonté à des fins de nettoyage conformément aux normes d'hygiène.
