A process for the manufacture of vanillin, comprising cultivating in a nutrient broth of a bacterium belonging to the order of the Actinomycetales, preferably of the family Streptomycetaceae, most preferably Streptomyces setonii, then adding the substrate ferulic acid, wherein the substrate concentration in the nutrient broth is from about 5 gL-1 to about 40 gL-1 in the fermentation broth, producing vanillin as the main reaction product of the biotransformation of ferulic acid and separating the biomass from the fermentation broth, and, extracting the vanillin to produce and, if desired, the by-product guaiacol from the fermentation broth.

Méthode pour l'obtention de vanilline, consistant à cultiver dans un milieu nutritif une bactérie appartenant à l'ordre des Actinomycetales, de préférence de la famille des Streptomycetaceae, et mieux encore Streptomyces setonii, puis à ajouter le substrat d'acide férulique, la concentration du substrat se situant aux environs de 5 g/L dans le milieu de culture à environ 40 g/L dans le milieu de fermentation; on obtient ainsi de la vanilline comme principal de la réaction de biotransformation de l'acide férulique; on sépare la biomasse du milieu de fermentation; enfin, on extrait du milieu de fermentation la vanilline à produire et, si souhaité, le produit secondaire gaïacol.
