The invention pertains to an aqueous composition containing lactoferrin, 35 - 70 wt% carbohydrate and/or polyol stabilizers, based on the total weight of the aqueous composition, said composition exhibiting a pH higher than 2, lower than 5. At these 5 conditions, the aqueous composition and lactoferrin contained therein may be subjected to a heat treatment without significantly affecting the physiological activity of the lactoferrin. The invention thus particularly pertains to the above aqueous composition, being heat-treated, thus containing heat-stabilized lactoferrin.
L'invention porte sur une composition aqueuse contenant de la lactoferrine, 35-70 % en poids de glucide et/ou des stabilisants polyols, sur la base du poids total de la composition aqueuse, ladite composition présentant un pH supérieur à 2, inférieur à 5. A ces conditions, la composition aqueuse et la lactoferrine contenue dans celle-ci peuvent être soumises à un traitement thermique sans affecter de manière significative l'activité physiologique de la lactoferrine. L'invention porte ainsi particulièrement sur la composition aqueuse ci-dessus, qui est traitée par la chaleur, contenant ainsi de la lactoferrine stabilisée par la chaleur.
