A process for the uniform acylation of starch comprising preconditioning the starch with a base for at least six hours, adjusting the PH to a suitable range for acylation, adding the desired acylation agent and isolating the acylated starch. A continuous method for acylating starch is also described.

L'invention se rapporte à un procédé d'acylation homogène de l'amidon comprenant les étapes consistant à conditionner préalablement l'amidon avec une base pendant au moins six heures, à régler le pH pour qu'il se situe dans une plage de valeurs appropriée permettant l'acylation, à ajouter l'agent d'acylation voulu et à isoler l'amidon acylé. L'invention se rapporte également à un procédé d'acylation de l'amidon en continu.
