A process for producing pumpable foodstuffs, wherein raw foodstuffs such as raw cheese is pre-comminuted, mixed with further ingredients, thermally treated by steam injection, subsequently cooled and creamed or emulsified and then fed or passed to a further working or processing operation. The present invention further relates to an apparatus for producing pumpable foodstuffs, such as processed cheese, having a treatment apparatus for raw foodstuffs, a mixer, a device or unit for heating and subsequently cooling the cheese mass and having feed pumps for the cheese mass.

Procédé de fabrication de produits alimentaires pouvant être pompés, comportant les étapes suivantes : réduire en petits morceaux les matières premières alimentaires comme du fromage non traité, les mélanger à d'autres ingrédients, chauffer le mélange obtenu par injection de vapeur, puis le refroidir et le mettre en crème ou l'émulsifier. Le produit alimentaire résultant est ensuite soumis à une autre transformation. L'invention concerne aussi un appareil pour fabriquer des produits alimentaires pouvant être pompés, comme le fromage fondu, comportant un appareil de traitement des matières premières alimentaires, un mélangeur, un dispositif ou unité de chauffage et, ensuite, de refroidissement de la masse de fromage et des pompes d'alimentation pour la masse de fromage.
