A process for the in vitro production of chemically modified polyphenolic polymer (PPP). First, stable, highly active extracellular tyrosinase is produced from genetically transformed microorganism such as Srrepromyces antibioticus. The tyrosinase is then incubated with a reaction substrate such as 1-tyrosine, hydrolyzed protein, or an oligopeptidc in combination with 1-tyrosine. The ratio of the oligopeptide/tyrosine combination as well as variation in the concentration of tyrosinase can be used to modify the color, the molecular size, and the spectral absorbance properties of the PPP produced. Alternatively, or additionally, oxidants such as hydrogen peroxide or hypachlorite can be used to modify the color of the PPP, regardless of the method used to produce the PPP, and the PPP can subsequently be fractionated using molecular weight cut-off ultrafiltration. Organic solvents can also be used in the method of making PPP to produce PPPs having variable but reproducible physical properties.

Procédé de production in vitro de polymère polyphénolique (PPP) modifié chimiquement. On produit d'abord de la tyrosinase extra-cellulaire stable hautement active à partir d'un micro-organisme transformé génétiquement tel que le Streptomyces antibioticus. On met ensuite en incubation la tyrosinase avec un substrat de réaction tel que de la 1-tyrosine, une protéine hydrolysée ou un oligopeptide combiné avec de la 1-tyrosine. On peut utiliser le rapport de la combinaison oligopeptide/tyrosine ainsi que les variations de concentration de tyrosinase pour modifier la couleur, la masse moléculaire et les propriétés d'absorption spectrale du PPP produit. On peut également utiliser des oxydants tels que le peroxyde d'hydrogène ou l'hypochlorite pour modifier la couleur du PPP, quelle que soit la méthode utilisée pour produire ce dernier, on peut ensuite fractionner le PPP par ultrafiltration de la masse moléculaire limite. Des solvants organiques peuvent également être utilisés dans le procédé de production afin d'obtenir des PPP présentant des propriétés physiques variables mais reproductibles.
