Foam is controlled by the addition of a hydroxy-functional polydiorganosiloxane of viscosity 10 to 150 mPa.s during a fermentation process such as an aqueous alcoholic fermentation process, or during other fermentation systems and proteinaceous systems such as sugar beet processing.

L'invention concerne un procédé de régulation de mousse par l'ajout d'un polydiorganosiloxane à fonction hydroxy qui présente une viscosité comprise entre 10 et 150 mPa.s, au cours d'un processus de fermentation tel qu'une fermentation alcoolique aqueuse, ou dans d'autres systèmes de fermentation et systèmes protéiques tels que le traitement des betteraves sucrières.
