Flavouring agent obtained by a process in which seeds of an edible plant are germinated, the sprouts obtained are matured under the effect of their endogenous enzymes, an optional fermentation of these sprouts is envisaged with at least one microorganism, the said enzymes and/or material are inactivated and all or part of the matured and/or fermented sprouts is recovered, and use of this flavouring agent as raw material for the preparation of products of the Maillard reaction, alone or mixed with other materials rich in flavour precursors and/or enhancers.

L'agent de sapidité de la présente invention s'obtient par un procédé consistant à mettre à germer la graine d'une plante comestible, à amener à maturité les germes sous l'effet d'enzymes endogènes. L'invention prévoit une fermentation éventuelle de ces germes au moyen d'au moins un micro-organisme, lesdits enzymes et/ou micro-organismes étant inactivés, et tout ou partie des germes mûrs et/ou fermentés étant ensuite récupéré. Cet agent de sapidité est utilisable comme matière première pour la préparation de produits issus de la réaction de Maillard, seule ou mélangée avec d'autres matières riches en précurseurs et/ou exhausteurs de sapidité.
