The invention concerns a method for coating cheese which consists in applying directly on the cheese to be coated successively at least a layer of a hydrophobic edible composition, and at least a layer of a hydrophilic edible composition, an emulsifying agent being present in the hydrophobic layer adjacent to a hydrophilic layer, the hydrophilic layer adjacent to a hydrophobic layer or to the interface between a hydrophobic layer and a hydrophilic layer.

Cette invention a pour objet un procédé d'enrobage de fromages consistant à appliquer directement sur le fromage à enrober successivement au moins une couche d'une composition comestible hydrophobe, et au moins une couche d'une composition comestible hydrophile, un agent émulsifiant étant présent dans la couche hydrophobe adjacente à une couche hydrophile, la couche hydrophile adjacente à une couche hydrophobe ou à l'interface entre une couche hydrophobe et une couche hydrophile.
