Description

The present invention provides a dry powdered cheese composition which may be reconstituted with water to provide a cheese product which has the appearance, flavor, texture, meltability, mouthfeel and bite of natural cheese comprising: (a) one or more dehydrated cheese powders; (b) a cold-water swelling starch; (c) a calcium-containing agent; (d) one or more salts; (e) one or more flavoring agents; and (f) vegetable oil. The composition has a moisture level which is less than about 3.5%, remains microbiologically stable, has a shelf life of at least 7 months and requires no refrigeration prior to reconstitution with water. The present invention also provides a cheese product produced from this cheese composition.

L'invention présente une composition sous forme de poudre sèche, pouvant être reconstituée avec de l'eau pour l'obtention d'un fromage qui a l'apparence, la saveur, la texture, la fusibilité, le goût et la mâche d'un fromage naturel. La composition renferme : a) une ou plusieurs poudres de fromage déshydratées; b) un amidon gonflant dans l'eau froide; c) un agent renfermant du calcium; d) un ou plusieurs sels; e) un ou plusieurs aromatisants; f) de l'huile végétale. La composition a une teneur en eau inférieure à 3,5 % environ, reste microbiologiquement stable, a une durée de vie d'au moins 7 mois et ne nécessite aucune réfrigération avant sa reconstitution avec l'eau. L'invention présente un fromage obtenu avec cette composition.
