Principal components of paprika red pepper, pungent chili, or other spice plants, e.g., of the genus Capsicum containing carotenoid pigments, are simultaneously extracted and concentrated with an edible solvent in a series of mixing and high temperature and pressure mechanical pressing steps using edible solvent and a countercurrent extraction procedure. The extract containing the carotenoid pigments may be hydrated and then centrifuged to remove fine particulate solids and gums. A solution having several times the concentraton of the carotenoid pigments and other flavor and aroma components of the starting raw material is obtained. The residual press solids may be cooled and hydrated following the last pressing operation.

Les composants principaux du paprika, du poivre rouge, du chili piquant ou autres épices telles que les caroténoïdes renfermant le genre Capsicum sont simultanément extraits et concentrés avec un solvant comestible au cours d'une série d'étapes de mélange et de pressage mécanique à haute température et haute pression utilisant un solvant comestible et mettant en oeuvre une procédure d'extraction à contre-courant. L'extrait contenant les caroténoïdes peut être hydraté, puis centrifugé de façon à retirer les solides particulaires fins et la gomme. On obtient ainsi une solution possédant plusieurs fois la concentration des caroténoïdes et autres composants parfumés et aromatiques du produit de départ. Les solides résiduaires peuvent être refroidis et hydratés après la dernière opération de pressage.
