1516-2 ABSTRACT An apparatus for high speed detection of the presence of inclusions, such as parasites, in fish filets as the fish fillets travel along a conveyor. The apparatus includes an ultrasound scanning transducer coupled to the moving fillet by a water filled recess in a sloped plate in such a manner that wetting of the fish fillet is minimized.
