Disclosed are improved methods for preparing a grain based extrudate involving high screw speeds, short barrel length extruders and short residence times. Preferred methods of preparation reside in methods for preparing the present improved RTE cereal or snack products. The preferred methods essentially comprise the steps in sequence of feeding an at least partially ungelatinized grain based material to a cooker extruder having at least one rotating screw, said cooker extruder including a barrel preferably having a relatively short length to diameter ("L/D") ratio of substantially less than (12); working the grain based material by rotating the screw at a rotational speed of at least 700 rpm to mix and heat the cereal material and to compress the grain based material; and extruding the plasticized mass through at least one die orifice to form an extrudate. Its preferred product aspect provides RTE cereal or snack products in the form of a puffed grain based product piece having a density of about 10 to 100 g/l, a moisture content of 1.5 % to 5 %, and cell sizes expressed in cross-sectional areas at the maximum diameter ranging from about 0.001 to 3 square millimeters with the majority of the cell sizes being substantially less than 1.0 square millimeters.

L'invention concerne des procédés améliorés de préparation d'un extrudat à base de grains faisant intervenir des vitesses élevées de vis, des corps courts d'extrudeuse et des temps courts de séjour. De préférence, les procédés permettent de préparer une céréale ou des en-cas améliorés prêts à la consommation. Les procédés préférés consistent essentiellement à acheminer une matière à base de grains au moins partiellement non gélatinisée vers un extrudeur-cuiseur comprenant au moins une vis de rotation, ledit extrudeur-cuiseur comprenant un corps présentant un rapport entre la longueur et le diamètre ("L/D") relativement court sensiblement inférieur à 12; à travailler la matière à base de grains en tournant la vis à une vitesse de rotation d'au moins 700 tours/minute pour mélanger et chauffer la matière à base de céréales et pour comprimer la matière à base de grains; et à extruder la masse plastifiée à travers au moins un orifice d'une matrice pour former un extrudat. De préférence, on obtient des céréales ou des en-cas prêts à la consommation sous forme de produits à base de grains soufflés présentant une densité d'environ 10 à 100g/l, une concentration en eau de 1,5 % et 5 % et des dimensions alvéolaires exprimées en coupes transversales avec un diamètre maximum allant d'environ 0,001 à 3 mm<2>, la majorité des dimensions alvéolaires étant sensiblement inférieure à 1,0 mm<2>.
