ABSTRACT OF DISCLOSURE Disclosed is a process for making wine in commercial quantities wherein the skins and seeds of the destemmed grapes are centri- fugally separated from the grape must and left almost entirely free of moisture. The grape must is subsequently enzymatically depectinized. The depectinized grape must is then cleaned of substantially all insoluble colloids and fermented into wine, using only a minimum, if any, of sulfur dioxide or other bact- eriological retractant. The skins and seeds are then separated by wind sifting, or screening, to make usable by-products. Also, for additional flavor and for red wines, color can be extracted from the segregated skins.
