ABSTRACT OF THE DISCLOSURE What is disclosed is a process for the production of microcapsules by forming an emulsion of an aqueous solution of a hydrophilic protein having free amino groups in a liquid which is substantially non-polar or which has a polarity less than that of a 4:1 w/w mixture of cyclohexane and chloroform as the continuous phase, and adding a solution of a compound capable of polymerizing with the protein in the aqueous solution so that an interfacial polymerization reaction occurs.
