Protein concentrates and protein isolates, in addition to processes for the production of protein concentrates and protein isolates, are disclosed. In particular, the disclosure relates to a process for removing fiber from an oilseed meal, comprising: i) mixing an oilseed meal with a blending solvent, optionally water, saline solution, polysaccharide solution or protein containing solution, to form a mixture; ii) optionally adjusting the pH of the protein slurry to a pH of about 2 to about 10; and iii) separating the mixture to form a protein slurry comprising soluble and insoluble proteins and an insoluble fiber fraction.
L'invention concerne des concentrés protéiques et des isolats protéiques ainsi que sur des procédés pour la production de concentrés protéiques et d'isolats protéiques. En particulier, l'invention concerne un procédé pour éliminer des fibres d'une farine d'oléagineux, consistant (i) à mélanger une farine d'oléagineux avec un solvant de mélange, éventuellement de l'eau, une solution saline, une solution polysaccharidique ou une solution contenant des protéines, pour former un mélange, (ii) à ajuster éventuellement le pH de la bouillie protéique à un pH d'environ 2 à environ 10, et (iii) à séparer le mélange pour former une bouillie protéique comprenant des protéines solubles et insolubles ainsi qu'une fraction à fibre insoluble.
