A method for the separation of carotenoids, especially lycopene, from fruits and vegetables, especially tomatoes. A mixture of powdered fruit and/or vegetable and an edible oil is subjected to supercritical - CO2 fluid extraction. A mixture of the oil and lycopene is separated. Lycopene of food grade quality is obtained.
