A process for preparing high-purity calcium pyruvate or its hydrates by reacting an aqueous solution of pyruvic acid with an inorganic calcium compound with the pH being set to 2 to 7, preferably 2.5 to 4, which comprises reacting an up to 10% strength aqueous solution of pyruvic acid with the calcium compound, in the presence or absence of a stabilizer or complexing agent, and mixing the resulting solution with an organic diluent at temperatures of 0 to 30°C and isolating the resulting precipitate of calcium pyruvate or its hydrate from the solution.

Méthode pour préparer du pyruvate de calcium haute pureté ou ses hydrates par réaction d'une solution aqueuse d'acide pyruvique avec un composé minéral du calcium, le pH étant ajusté entre 2 et 7, et de préférence entre 2,5 et 4; la méthode consiste à faire réagir une solution aqueuse renfermant jusqu'à 10 % d'acide pyruvique avec le composé calcique, en présence ou en l'absence d'un stabilisateur ou d'un agent de complexation, à mélanger la solution résultante avec un diluant organique à des températures de 0 à 30 °C, et enfin à isoler le précipité résultant de pyruvate de calcium ou son hydrate de la solution.
