The invention relates to baked products and a process for the production thereof. The traditional baking process is complemented by a smoking stage. A smoking process, for example directly after conventional baking is used to achieve a corresponding new flavour and also a surprising improvement in the life and the quality of the product after crisping, in particular for soft smoked baked products made from pastry dipped in a sodium hydroxide solution before baking.

L'invention concerne des pâtisseries et un procédé de production correspondant. Le procédé de cuisson traditionnel est complété par une étape de fumage. Par un fumage réalisé, par exemple, juste après le procédé de cuisson habituel, on obtient notamment pour les pâtisseries molles obtenues à partir d'une pâte plongée dans une solution d'hydroxyde de sodium, non seulement une nouvelle saveur plaisante mais aussi une nette amélioration de la durée de conservation et de la qualité de la pâtisserie après l'avoir repassée au four.
