ABSTRACT Porous blocks of the type used for cooling bread and similar food products are cooled rapidly by being placed in a chamber wherein the air pressure is less than ambient, and a flow of cooling air ia induced throught the interior of the block to the chamber. The flow of cooling air is induced by inserting an injector needle into the block.
