A rotating cutter for cutting helical vegetable strips includes a cutter disk having a knife blade extending radially outwardly from the axis of rotation and a plurality of slots thereon, and a removable plate having a series of upwardly extending slitter blades that extend through the slots in the disk when the plate is secured to the disk.
