A biscuit is described which is free from added fats and includes from 36 to 90% by weight of cereal flakes and from 7 to 28% by weight of sugar binder. The biscuit is manufactured by baking and extrusion of selected ground cereals and flaking and mixing of the flakes with the sugar binder. The flake-binder dough, which is obtained with a moisture content of 15-30%, is finally shaped.
