A compact apparatus for manufacturing of Ethiopian circular, thin, flat breads widely known among Ethiopians and some neighbouring countries as Injera or Enjera. The apparatus comprising four parts: the first part is a batter deposition/batter spreading/ baking section, the second part is cooling section, the third section is a detaching part and the fourth part is a packing and distribution section. The batter spraying/ baking section comprises one or more batter spraying nozzles. The nozzle comprises up side down "T" shaped pipe that has well spaced holes on the bottom section to spray injera batter on a hot non-sticky baking surface. The baking surface comprises heating wires that heat the non- sticky baking surface with a batter on it to a desirable temperature. The cooling section comprises a cold air supply and a hot steam suction to cool the injera pieces to a room temperature. The detaching part comprises one roller that coat with non-sticky coat and rotates in the same direction as the non-sticky surface, and finally injera pieces are ready to be packed and distributed from the packing conveyor belt.
