The invention describes a method for degrading polysaccharides by using an enzyme preparation comprising endo-.beta.-1,2-galactanase activity. In the process industry and in the paper machine environment in particular, microbes form biofilms on surfaces, consisting of microbes, fibres, and polysaccharide that protects the microbe cells, increases the viscosity of the biofilm, and protects the biofilm against drying. By treating biofilms and other slime deposits in the process industry with the enzyme preparation according to the invention, the problems caused by biofilms to the process industry can be reduced. Endo-.beta.-1,2-galactanase can also be used in the preparation of various mono- or oligosaccharides.
L'invention concerne un procédé de dégradation des polysaccharides utilisant une préparation enzymatique renfermant une endo-.beta.-1,2-galactanase. Dans l'industrie de la transformation et dans l'environnement des machines à papier en particulier, les microbes forment sur les surfaces des biofilms constitués de microbes, de fibres et d'un polysaccharide qui protège les cellules microbiennes, augmente la viscosité du biofilm et protège le biofilm contre la déshydratation. Le fait de traiter ces biofilms et autres dépôts microbiens de l'industrie de la transformation avec la préparation enzymatique selon l'invention permet de réduire les problèmes causés par les biofilms dans l'industrie de la transformation. L'endo-.beta.-1,2-galactanase peut également être utilisée dans la préparation de divers mono- ou oligosaccharides.
