The invention provides a process of producing a filled sheet of process cheese, in which process cheese and a filling are co-extruded into a packaging material (56) to produce a strand (16) having a thickness and the strand (16) is separated at predetermined locations (18) to produce separate sheets, in which the filling is fully enclosed, and a machine (10) for producing filled sheets of process cheese, having a co-extrusion nozzle (22) with an outer port for extruding an outer component and an inner port for extruding an inner component fully enclosed by the outer component into packaging material to form a co-extruded strand, optionally a device (40) for reducing the thickness of the co-extruded strand (16), such as two or more cooperating rollers (42), and a device (44) for separating the co-extruded strand (16), such as two or more rollers (46) having ridges, as well as a sheet of process cheese filled with a filling fully enclosed by the process cheese and having a thickness of 6 mm or less.
L'invention porte sur un procédé, pour obtenir une feuille remplie de fromage fondu, dans lequel un fromage fondu et un remplissage sont co-extrudés dans un matériau de conditionnement (56) afin de produire un ruban (16) ayant une certaine épaisseur, le ruban (16) étant séparé en des emplacements prédéterminés (18) afin de produire des feuilles séparées, dans lesquelles le remplissage est totalement renfermé. L'invention porte également sur une machine (10), pour obtenir des feuilles remplies de fromage fondu, qui présente une buse de co-extrusion (22) avec un orifice externe pour extruder un composant externe et un orifice interne pour extruder un composant interne complètement renfermé par le composant externe dans un matériau de conditionnement afin de former un ruban co-extrudé. L'invention peut aussi porter sur un dispositif (40) pour réduire l'épaisseur du ruban co-extrudé (16), par exemple deux ou plusieurs rouleaux coopérants (42), et sur un dispositif (44) pour séparer le ruban co-extrudé (16), par exemple deux ou plusieurs rouleaux (46) présentant des arêtes, ainsi que sur une feuille de fromage fondu remplie par un remplissage totalement renfermé par le fromage fondu et ayant une épaisseur d'au plus 6 mm.
