The present invention relates to a process for the production of structurally pure lactitol crystal forms selected from the group consisting of lactitol anhydride, lactitol monohydrate, lactitol dihydrate and lactitol trihydrate. The crystallization is performed by cooling a lactitol solution from a temperature at or slightly below the highest temperature of the stability area of the respective crystalline lactitol form to a temperature at or slightly above the lowest temperature of the stability area of said crystalline lactitol form, said stability areas being defined, respectively, within the temperature limits of 100 ~C and 0 ~C by the intersections of the solubility lines shown in Fig. 1, and by maintaining the supersaturation of said lactitol solution at a level of 1 to 8 % (w/w) above the solubility line of the respective lactitol form crystallizing in said area.

L'invention concerne un procédé permettant de produire des formes cristallines de lactitol structurellement pur, choisies dans le groupe comprenant l'anhydride de lactitol, le monohydrate de lactitol, le dihydrate de lactitol et le trihydrate de lactitol. Pour réaliser la cristallisation, on refroidit un solution de lactitol de façon à la faire passer d'une température égale ou légèrement inférieure à la température la plus élevée de la zone de stabilité de la forme cristalline correspondante du lactitol, à une température égale ou légèrement supérieure à la température la plus basse de la zone de stabilité de ladite forme cristalline. Les zones de stabilité sont définies, entre les limites de températures de 100 ·C et 0 ·C, par les intersections des courbes de solubilité montrées dans la figure 1. On maintient la sursaturation de la solution de lactitol à un niveau compris entre 1 et 8 % (en poids) au-dessus de la courbe de solubilité de la forme de lactitol cristallisant dans ladite zone.
