The procedure includes the suspension of freshly collected milk in acetone, then filtration under reduced pressure or centrifugation with or without an inert gas atmosphere. The process allows preservation of enzymatic activity of milk and presumably immunoglobulin properties, and native structure of lipids. Acetone has bactericidal and viricidal effects (Goodman et al. 1980) that provide the advantages of pasteurization while keeping the properties of raw milk. Traces of acetone are removed by ventilation with air or an inert gas.
