ABSTRACT Biliproteins such as delta-bilirubin or delta-bilipeptide are useful as antioxidants with respect to a wide range of substances. Delta-bilipeptide asthe term is used herein is a truncated form of delta-bilirubin in which an albumin analogue of 10 - 200 amino acid residues replaces the albumin portion of delta-bilirubin. Delta-bilirubin, delta-bilipeptide or a composition comprising a biliprotein is used specifically to minimize oxidative damage caused to various compounds including those intended for food, drug and cosmetic use.
