A method and apparatus for application of a film onto a substrate is disclosed. A stock mixture, for example a proteic stock mixture having 5% to 25% solids, is melted by application of heat to a pre-determined temperature, for example from 65 to 75 °C. Once melted, the stock mixture flows into an incubator where the temperature is maintained until such a time as the stock mixture is sprayed onto a substrate, thereby forming a film on the substrate surface, such as a proteic film. The substrate is not limited to any in particular, but may be a food susceptible to dehydration, such as pizza, quiche, meat, fresh fruit or vegetables.
