A novel bacillus-derived transglutaminase is char- acterized in that: it is active at a pH between about 7 and about 9; it is active at a temperature between about 40°C and about 65°C; it is stable at about 60°C or lower; it is independent of Ca2+ and has an activity of 50% or more in the presence of 5 mM of Ca2+; it is inhibited by any of NEM, cystamine and (NH4)2SO4; it is not inhibited by any of EDTA, DTT and 2-ME; 7) it has a molecular weight of (a) from about 18,000 to about 22,000 as measured by gel permeation and (b) from about 28,000 to about 30,000 as measured by SDS-PAGE; and it catalyzes the transacylation of .gamma.-carboxyamide group in the glutamine residue existing in a peptide chain. The transglutaminase of the invention can be used for pro- ducing crosslinked polymer substances and finds appli- cation in the industrial production of various foods.
