The present invention discloses a composition comprising untreated flour, and starch n-alkenyl succinate, and optionally starch. The present invention relates to bakery products comprising aforementioned composition. Sponge cake is a typical example of these bakery products. The composition replaces chlorinated (bleached) or untreated flour or chlorinated flour and whole egg for obtaining cholesterol reduced bakery products.

La présente invention est une composition comprenant de la farine non traitée et du n-alkenyl succinate d'amidon, et facultativement de l'amidon. Elle concerne les produits de boulangerie comprenant la composition mentionnée précédemment. Le gâteau éponge est un exemple type de ces produits de boulangerie. La composition remplace la farine chlorée (blanchie) ou non traitée ou la farine chlorée et les oufs entiers afin d'obtenir des produits de boulangerie à teneur réduite en cholestérol.
